What Is Dolly Sauce?
Dolly Sauce is our simple syrup — except we don't make it with hot water.
We make it with coffee.
Why not just use water?
Standard simple syrup is a 1:1 (or 2:1) ratio of sugar dissolved in hot water. It's pure sweetness with no flavor of its own — which is exactly the point in a cocktail, but a strange choice in a coffee drink. You're diluting your coffee and adding sweetness that has nothing to do with the coffee itself. Two separate jobs, working against each other.
Dolly Sauce dissolves the sugar in brewed coffee instead. Same sweetening power, except now the syrup itself is carrying real coffee flavor — body, acidity, a little bitterness to balance the sugar — instead of being a blank, sweet nothing sitting on top of your drink.
What it actually does in a drink
It means we can sweeten a drink and deepen it at the same time, instead of sweetening it and thinning it out. A drink built with Dolly Sauce doesn't taste "sweetened" the way a drink with regular syrup does — it tastes more like coffee, just rounder. It's a small mechanical difference with a real effect on the cup.
Why it has a name at all
Because it's not simple syrup. Calling it that on a menu would undersell what it's doing and invite the wrong expectations. It's a specific, deliberate ingredient with its own job — so it gets its own name.
