What is a co-ferment coffee?
In specialty coffee, co-fermentation means the producer intentionally adds carefully prepared fruit cultures, yeasts, or other nutrient inputs during fermentation — alongside the coffee cherry or parchment — so microbial activity and fruit chemistry shape the cup.
Mad Lab’s approach (as described on the Tropical product page) is about precision, not loudness: isolate and cultivate microorganisms (notably Lactobacillus and Saccharomyces cerevisiae), build a “mother culture with tropical fruit and natural sugars, then ferment the coffee under monitored pH / Brix so fruit character integrates without wiping out the coffee’s own structure.

How it tastes: Tropical drinks like a fruit cocktail with structure daiquiri brightness, candy-red Kool-Aid sweetness, and passionfruit acidity over a natural anaerobic co-ferment base from Finca Monteblanco.
Process short version: Build a mother culture of Lactobacillus + Saccharomyces cerevisiae, enriched over ~8 days (~190 hours) with pineapple, cholupa, gulupa, passion fruit, molasses, and cane sugar. Sort and float freshly harvested cherries; add the fruit culture in sealed tanks. Second fermentation ~150 hours with Brix and acidity held in check. Dry slowly on parabolic dryers and raised beds to lock in aromatics.

Brew tips (home starting points)
These are suggested starting ranges for expressive co-ferments — not lab-validated Mad Lab recipes. Prefer fresh whole bean, ground just before brew.
Filter / pour-over: Ratio 1:16 to 1:17 (e.g. 18g coffee → 290305g water). Water 92–96°C (198205°F). Grind medium-fine. Total brew about 2:30–3:30.
Immersion (French press / Clever): Ratio 1:15 to 1:16. Steep 3:004:00, then plunge or drain.
Espresso (optional): Start near 1:2 in 25–30s, then dial for sweetness. Razzle-Dazzle is usually the easier milk partner; Tropical can shine as a short straight shot.
