    We've never offered a decaf. We held out until we found one that met our standard — and this is it.

    Most decaf on the market is processed with chemical solvents — methylene chloride or ethyl acetate — that strip caffeine quickly and cheaply. We weren't willing to do it that way.

    The Mountain Water Process uses only pure glacial water from the mountains of Chiapas, Mexico. No chemicals. No shortcuts. The caffeine is removed through a carbon filtration system, while the oils and soluble compounds that give coffee its character are preserved and reintroduced to the seed. What you get is a decaf that actually tastes like the coffee it came from.

    How it's made:

    Green coffee arrives at Descamex
    Our selected green coffee is sent to the Descamex facility in Chiapas — one of the most respected Mountain Water Process operations in the world.

    Soaked in Green Coffee Extract (GCE)
    The seeds are soaked in water pre-saturated with coffee solids — everything except caffeine. Because the water is already "full" of flavor compounds, only caffeine is drawn out of the seed.

    Caffeine filtered through activated carbon
    The caffeine-saturated water passes through carbon filters, which trap and remove the caffeine molecules. No chemicals involved at any stage.

    Flavors reintroduced to the seed
    The now-decaffeinated seeds are reintroduced to the cleaned GCE water, reabsorbing their original flavor compounds. Origin character stays intact.

    Dried, shipped, roasted at Mad Lab Coffee
    The processed seeds are dried and shipped to our Downtown Los Angeles roastery, where we roast them to the same standard as everything else we offer.

    Available in whole bean. We recommend grinding fresh before brewing. Works beautifully as espresso, pour-over, or batch brew — same care, no caffeine.
