Most decaf on the market is processed with chemical solvents — methylene chloride or ethyl acetate — that strip caffeine quickly and cheaply. We weren't willing to do it that way.
The Mountain Water Process uses only pure glacial water from the mountains of Chiapas, Mexico. No chemicals. No shortcuts. The caffeine is removed through a carbon filtration system, while the oils and soluble compounds that give coffee its character are preserved and reintroduced to the seed. What you get is a decaf that actually tastes like the coffee it came from.
